Herbs & Spices

We grow various herbs, most of which we use during the summer. However, if we have a bounty we will dry them. So far we have: Basil, Thyme, Dill, Dill Seeds, Coriander Seeds, Parsley, Mint, Chives and Oregano.

We have also dried Bell Peppers and Jalapeno peppers.

The asparagus came from King Orchards . We are still looking for someone who can provide us bulk pricing. $2.50 a pound and we bought 20 lbs!!!!

Strawberry Preserves — 10 half-pints

For the first time we have successfully gotten them to set properly. I cannot wait to eat some! These berries we got from Bolt's Farm and they are about two weeks later than usual.

Macerated berries work so much better when freezing. He threw his back out and so she had to pack 'em and freeze 'em. They are wonderful, though.

Mulberry Preserves — 6 half-pints

Picking mulberries is not easy. Well, we have a feral tree rather than a managed bush so... But the berries are delicious. This was our first attempt and we think it went well.

This is a new recipe. As with most pickling, it's fairly easy. We got the tomatoes from Coleman Centennial Farm . We get all our tomatoes there!

Raspberries are one of the few that can be canned whole and come out looking pretty much like they went in. Great for pancakes, ice cream, cereal ... whatever!

Tomatoes are in! We get all of ours from Coleman Centennial Farm and they are good! And reasonably priced. Haven't made Chili Sauce in a couple of years.

Still canning various tomatoes. This will be gifts. It's very flavorful and a little bit hot!

After finishing the chutney I had a gallon of juice left over so I canned it. It is very tasty so we'll use it in chili and meatloaf and who knows what else.

Almost the last of our basil - still a little bit left. This makes for 30 half-pints this year (29 left as we've already used one). So, a quart of dried basil so far, we may dry the rest rather than make more pesto.
