Peaches
Our favorite. A little messy to prepare, but exquisite flavor. In the middle of winter these taste of the gods!
Ingredients (14 quarts)

Half-bushel peaches

Honey/sugar syrup, light
Directions

Start a large pot of boiling water and a container with ice water.

You want to process the fruit in bunches not letting the boiling water cool nor the ice water to warm.

Using a basket of some sort, lower peaches into the boiling water for several minutes, then dump immediately into the cold water.

Once the peaches have cooled a bit you can slip the skins off.

Once all the peaches have been skinned you can cut them into wedges off the pits, discarding said pits.

Fill the jars, gently pressing down to get as much fruit as possible.

Cover with boiling syrup leaving a 1” headspace. Remove any air bubbles.

Wipe, lid and ring. Water bath for 20 minutes.
