Nectarines
Another deep winter treat. They taste almost as good as right off the trees.
Ingredients (14 quarts)

Half-bushel nectarines

Honey/sugar syrup, light
Directions

Wash nectarines in cold water

Slice in half or into wedges, discarding pits

Fill jars, gently pressing down to get as much fruit in as possible

Cover in boiling syrup, leaving ½” headspace. Remove air bubbles

Water bath for 20 minutes
