Chili Sauce

Not too sweet, this chili sauce has a deep flavor, and freshness galore.

Ingredients (7 half-pints)

  • 2½ lbs tomatoes
  • 1 stalk of celery
  • 1 lg onion
  • 1 bell pepper (any color)
  • 4 Tbs sugar: 3 brown, 1 white
  • 1 tsp Allspice
  • 1 tsp Cinnamon
  • 1 tsp Ground Cloves
  • Red Pepper flakes to taste (we use a ½ teaspoon)
  • 1 Tbs sea salt
  • ½ cup distilled white vinegar

Directions

  1. Chop all vegetables (or use food processor, should be chunky)
  2. Add everything to pot, bring to boil.
  3. Simmer for an hour or two until no longer watery, check and adjust spices.
  4. Fill jars and water bath 30 minutes.
