The apricot flavor comes through really nicely in this preserve.
Ingredients

7 cups apricots, peeled or unpeeled.

4 cups sugar

3 cups mild honey
Directions

Mix apricots and sugar in a bowl. Cover and refrigerate overnight.

Heat to boiling.

Add honey, return to boil and boil until it forms a gel (Notes below).

Fill jars leaving ½" headspace.

Water bath for 5 minutes.
