Corn Relish
A successful recreation of Grandma Myrtle's relish from my youth!
Ingredients

6 cups corn kernels (about 15 ears)

1½ cups water

4 stalks celery diced

2 red bell peppers diced

1 green bell pepper diced

1 med onions diced

2¼ cups white vinegar
-
1¼ cups sugar
-
3 tsp dry mustard
-
1¼ tsp kosher salt

1¼ tsp celery seed
-
1 tsp ground turmeric
Directions

Combine everything, bring to a boil, stirring.

Simmer 5 minutes after sugar has dissolved.

Ladle into pint jars leaving ½" headspace.

Water bath 15 minutes.
