Ingredients

3 qts fresh strawberries

~8 cups sugar
Directions

Wash the strawberries

Remove the caps

Combine the sugar and berries in alternating layers in a large bowl and let sit 8 hours at room temperature or overnight in the regrigerator

Heat the mixture to boiling, stirring to prevent scorching. Cook to 221° or until the syrup has thickened - about 15 to 20 minutes

Remove from heat and skim

Fill jars leaving ½" headspace

Waterbath for 5 minutes
