Rhubarb Chutney

Rhubarb gives this chutney a unique taste. Complex and very slightly sour. Delicious!

Ingredients (7 half-pints)

  • 4 cups sliced rhubarb
  • 3 cups sliced onion
  • 1 cups raisins
  • 3½ cups lightly packed brown sugar
  • 2 cups cider vinegar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cloves
  • tsp cayenne pepper

Directions

  1. Combine all ingredients in a heavy bottomed pot.
  2. Bring to a boil then reduce heat and simmer gently until thickened, ~45 minutes, stirring frequently.
  3. Ladle hot chutney into hot jars leaving ½" headspace.
  4. Water bath for 10 minutes
