Rhubarb Chutney
Rhubarb gives this chutney a unique taste. Complex and very slightly sour. Delicious!
Ingredients (7 half-pints)

4 cups sliced rhubarb

3 cups sliced onion

1 cups raisins

3½ cups lightly packed brown sugar

2 cups cider vinegar

1 tsp salt

1 tsp cinnamon

1 tsp ground ginger

½ tsp ground cloves
-
⅛ tsp cayenne pepper
Directions

Combine all ingredients in a heavy bottomed pot.

Bring to a boil then reduce heat and simmer gently until thickened, ~45 minutes, stirring frequently.

Ladle hot chutney into hot jars leaving ½" headspace.

Water bath for 10 minutes
