Apricots
The apricot's unique flavor is a real treat in the dead of winter. Its almost too easy to make.
Ingredients (14 quarts)

Half-bushel apricots

Honey/sugar syrup, light
Directions

Wash apricots in cold water

Slice in half or into wedges, discarding pits

Fill jars, gently pressing down to get as much fruit in as possible

Cover in boiling syrup, leaving ½” headspace. Remove air bubbles

Water bath for 20 minutes
