Ingredients

25 pounds apples, various varieties

2 cups maple syrup

2 cups apple cider

10 cinnamon sticks

Ground cinnamon

1+ Tablespoons ground cloves

1+ teaspoons allspice
Directions

Wash & core the apples

In roasting pans, fill to rim with apple wedges.

For each pans worth, add 1 cup maple syrup, 1 cup apple cider and 5 or more cinnamon sticks.

Roast at 350° for 1 hour, stirring every 30 minutes or so, until apples are really soft.

Run apples through a food mill.

Add cinnamon, ground cloves and allspice.

Adjust seasonings - remember, the butter will cook down and the flavors become more intense.

Return to roasting pan and continue to cook down until half its original volume.

Stir frequently from the outside to the inside. When a dollop on a plate no longer runs, remove.

Fill jars with 1" headspace

Water bath for 20 minutes.
