There are many ways to preserve this wonderful berry. You can can them whole . You can add them to a chutney .
Here we are making preserves and jelly.
Ingredients

7 cups mashed raspberries, black or red

4 cups sugar

3 cups mild honey
Directions

Warm the sugar in a 250° oven

Place berries in a large stainless steel or enamel saucepan. Bring to a full boil over high heat, mashing berries with a potato masher as they heat. Boil hard for 1 minute, stirring constantly

If you are making jelly, strain the berries through a Chinois or a cheesecloth lined strainer then return to the main pot.

Add warm sugar, return to a boil, stirring until sugar dissolves

Add honey, return to boil and boil until it reaches 220°

Fill jars leaving ½" headspace

Water bath for 10 minutes
