Apricot Chutney
Apricots lend a sweetness that is unique. This chutney is rich and complex, the flavors and textures are divine.
Ingredients (7 helf-pints)

12 apricots

4 red onions

4 Tbsp ginger

5 cardamom pods

1 tsp salt

2 tsp cinnamon

4 small green chiles
-
2 cups brown eugar

2 cups apple juice
Directions

Combine all ingredients and simmer until thick, about 1-2 hours

Fill jars leaving ½" headspace.

Water bath for 10 minutes.
