Asparagus Quiche
Ingredients

1 lb fresh asparagus, trimmed and cut into 1⁄2" pieces

1 sm red onion, chopped

2 cloves garlic
-
10 slices bacon, cooked, drained and crumbled

2 (8-inch) pie crusts

1 egg white, lightly beaten

4 lg eggs
-
11⁄2 C half and half
-
1⁄4 tsp ground nutmeg

Salt & Pepper to taste

2 C shredded Swiss cheese
Directions

Heat oven to 400° F.

Roast asparagus, onion and garlic cloves until asparagus is tender but still firm, 5 - 10 minutes.

Cook the bacon until crisp, drain and crumble.

Brush pie crusts with beaten egg white. Sprinkle crumbled bacon and asparagus/onion.

Whisk eggs together with half and half, nutmeg, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.

Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.
