Pie Crusts

Ingredients

  • 240 g flour
  • 1 tsp salt
  • 14 g yeast
  • 2⁄3 cup lard
  • 1⁄4 cup and 1 Tbs ice water

Directions

  1. Whisk the flour, salt and yeast together in a large bowl.
  2. Cut in the lard with a knife or pastry blender until is resembles coarse crumbs.
  3. Add the water 1 T at a time, blending gently until all the flour is moistened and dough almost cleans the side of the bowl.
  4. Divide the dough in half and shape into flattened rounds.
  5. Wrap in plastic and regrigerate for at least an hour.
