Slow Cooker White Chicken Chili

Ingredients

  • 1‌1⁄2 lbs chicken breasts (or thighs)
  • 2 15-oz cans Cannellini beans, drained
  • 1 8-oz can whole kernel corn (or 2 C frozen)
  • 4 C chicken broth
  • 1 4-oz can green chiles, or 1 poblano pepper, diced
  • 1 C sweet yellow onion, diced
  • 1 tsp salt
  • 1⁄4 tsp pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1⁄2 tsp oregano
  • 1⁄2 tsp garlic powder
  • 1 C sour cream
  • 2 Tbs minced cilantro

Directions

  1. Add the chicken, beans, corn, chicken broth, green chiles, onion, chili powder, cumin, oregano, garlic powder, salt and pepper to the slow cooker. WAIT TO ADD THE SOUR CREAM AND CILANTRO. Stir.
  2. Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 8 hours.
  3. When the cooking time is done, shred the chicken with two forks.
  4. Add the sour cream and cilantro. Stir.
  5. Serve and enjoy!
  6. Serve with Fritos, Monterey jack cheese, Cornbread, a squeeze of lime juice, additional sour cream, and cubed avocado.
