Raw Brocolli Soup

Ingredients

  • 3 cups broccoli florets
  • 1 cup chopped broccoli stems
  • 1‌1⁄2 cups water
  • 2 Tbs lemon juice
  • 1⁄2 cup raw cashews
  • 1⁄2 cup sliced celery
  • 1⁄4 cup chopped onion
  • 1 clove garlic
  • 1 Tbs fresh dill or 1 tsp dried
  • 1 tsp fresh rosemary or 1⁄2 tsp dried
  • 1 Tbs fresh parsley or 1 tsp dried
  • 1 tsp fresh thyme or 1⁄2 tsp dried
  • 1 Tbs nama shoyu (soy sauce)
  • 1⁄2 tsp kosher salt
  • 1⁄2 tsp fresh ground black pepper
  • 1⁄4 tsp red pepper or cayenne
  • 1⁄2 tsp celery seed
  • Fresh dill

Directions

  1. Gather the ingredients.
  2. Place all of the ingredients in a blender and blend for 30 to 40 seconds or until a creamy consistency is reached. You may wish to add a little more water.
  3. Garnish your raw cream of broccoli soup with extra fresh dill. Serve immediately and enjoy!
