Spicy Kielbasa Soup

Ingredients

  • 1⁄2 lb kielbasa, sliced
  • 1 med onion
  • 1 green bell pepper, chopped
  • 1+ rib celery with leaves, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can northern beans, drained
  • 1 quart tomatoes
  • 1+ zucchini, sliced
  • 1+ carrot, shredded
  • 1 Tbs dried parsley
  • 1⁄4 tsp red pepper flakes, crushed
  • 1⁄4 tsp pepper

Directions

  1. In a nonstick skillet, cook kielbasa over medium heat until lightly browned.
  2. Add the onion, green pepper and celery; cook and stir for 3 minutes.
  3. Add garlic; cook 1 minute longer.
  4. Transfer to a 5 quart slow cooker. Stir in the remaining ingredients.
  5. Cover and cook on low for 8-9 hours or until vegetables are tender.
