Lemon-Parmesan Crispy Smashed Potatoes

Ingredients

  • 1 lb baby potatoes
  • 2 Tbs olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 cloves garlic, smashed and peeled
  • 2 Tbs grated Parmesan cheese
  • Zest of 1 lemon

Directions

  1. Position rack in lower third of oven. Heat oven to 450° F.
  2. Place potatoes in a large pot, cover with water and bring to a boil. Cook, covered, until fork-tender, about 15 minutes. Drain.
  3. Drizzle 1 tablespoon of oil on a large rimmed baking sheet. Add the potatoes and, using the bottom of a glass coated with cooking spray, gently smash each potato to flatten. Drizzle with the remaining 1 tablespoon of oil and sprinkle with salt and pepper. Scatter garlic on the pan.
  4. Bake the potatoes, flipping once halfway, until crispy, about 20 minutes. Sprinkle with Parmesan and lemon zest.
