Roast Courgette
Ingredients

1 lb courgette, sliced

11⁄2 lg red pepper, deseeded and sliced

1 lg red onion, peeled and sliced

2 cloves garlic, finely chopped

400 g can chickpeas, drained

1 tsp smoked paprika
-
1 tsp dried mixed herbs

1⁄2 tsp ground cumin

80 g feta cheese
Directions

Heat oven to 180° C
-
Add all ingredients into a baking tin.

Drizzle over a glug of olive oil and a pinch of sea salt and roast for 25-30 minutes until all the veg is soft and turning golden at the edges.

Crumble over the feta cheese and serve.
