Roast Courgette

Ingredients

  • 1 lb courgette, sliced
  • 1‌1⁄2 lg red pepper, deseeded and sliced
  • 1 lg red onion, peeled and sliced
  • 2 cloves garlic, finely chopped
  • 400 g can chickpeas, drained
  • 1 tsp smoked paprika
  • 1 tsp dried mixed herbs
  • 1⁄2 tsp ground cumin
  • 80 g feta cheese

Directions

  1. Heat oven to 180° C
  2. Add all ingredients into a baking tin.
  3. Drizzle over a glug of olive oil and a pinch of sea salt and roast for 25-30 minutes until all the veg is soft and turning golden at the edges.
  4. Crumble over the feta cheese and serve.
