Herby Peanut Noodles

Ingredients

  • ½ C creamy peanut butter
  • ⅛ C soy sauce or tamari
  • 3 Tbs rice vinegar
  • 1 Tbs toasted sesame oil
  • 1 clove garlic, grated
  • 1 16–oz pkg rice linguini noodles
  • 1 C chopped, mixed fresh herbs (chives, mint, basil & cilantro)
  • ⅓ C roasted salted peanuts

Directions

  1. Whisk peanut butter, soy sauce, vinegar, oil and garlic until combined. Whisk in ¼ cup of water (mixture should be pourable).
  2. Bring large pot of water to boil over high heat. Add noodles, cook until al dente. Drain and rinse with cold water until cooled down. Drain well.
  3. Add noodles to peanut mixture and gently toss until combined. Top with herbs and peanuts.
