Grilled Carrots
Ingredients

2 lb sm to med carrots, peeled and ends trimmed

2 Tbs olive oil, divided

¾ tsp kosher salt, divided

Fresh ground pepper

1 Tbs lemon juice

2 tsp harissa paste (or 2 tsp harissa powder)

2 Tbs fresh mint, chopped
Directions

Heat grill to med-high heat. Turn off one burner (or bank coals to one side).

Toss carrots with 1 tablespoon of oil and ½ tsp of salt and pepper. Grill over direct heat, turning often, 7 to 10 minutes to slightly char.

Transfer carrots to other side and cook over indirect heat until they are tender, approximately 20 minutes longer. Remove to platter.

Stir remaining tablespoon of oil, lemon juice and harissa ina small bowl. Drizzle over the carrots. Top with mint and remaining ¼ teaspoon of salt.
