Corn Pudding
Ingredients

5 eggs

½ C milk

⅓ C butter, melted

4 Tbs cornstarch

1 4-oz can green chillies

1 15-oz can whole kernel corn, drained

2 14-oz cans cream-style corn

1 shallot, finely chopped
Directions

Heat oven to 400° F. Grease a 2-quart casserole dish.

In a large bowl, lightly beat eggs. Add milk and melted butter. Add the cornstarch and whisk until fully incorporated. Add the chilles, corn, creamed corn and shallot. Mix well. Pour mixture into the prepared casserole dish.

Bake in the oven for one hour.
