Cilantro Lime Rice

Ingredients

  • 1½ cups long grain rice
  • 2¼ cup water
  • ½ Tbs olive oil
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • 3 Tbs lime juice
  • Zest from 1 lime
  • 1 cup fresh cilantro, finely chopped

Directions

  1. In a medium sized cooking pot, wash the rice thoroughly and drain. Add water, olive oil, garlic and salt and give it a good stir.
  2. Bring to a boil, uncovered, over high heat, about 4-5 minutes.
  3. Turn the heat down to low and cover. Simmer for 20-25 minutes until the rice is soft and fluffy. Add lime juice, lime zest and cilantro and toss to combine. Fluff with a fork and serve.
