Butter Garlic Noodles
Ingredients
- 1½ liters water
- ¼ tsp salt
- 3 Tbs oil, separate
- 1 pkg (200 g) noodles
- 1 Tbs butter
- 15 garlic cloves, chopped
- 2 green chillies, chopped
- ¼ cup diced onion
- ¼ cup diced capsicum
- ¼ cup cabbage, chopped
- ¼ cup sliced spring onion
- 1 tsp white vinegar
- 2 tsp soy sauce
- 2 tsp tomato ketchup
- ½ tsp black pepper powder
- Salt, to taste
Directions
- Bring the water, salt and one tablespoon of oil to a boil.
- Add the packet of dried noodles. Cook until almost done, separating the noodles as they cook.
- Drain and rinse with fresh water, drain again.
- Mix the noodles with a little oil and set aside.
- Add tbs butter to a hot pan (wok). Fry one tablespoon of the garlic until it begins to brown. Remove and set aside.
- Add the other two tablespoons of oil to the pan. Add the rest of the garlic and the two green chillies. Fry until fragrant.
- Add the onion, capiscum and cabbage. Fry on medium heat for 2 minutes.
- Add the vinegar and soy sauce. Mix well.
- Add ketchup and mix well.
- Add the noodles, pepper and salt and stir well, coating the noodles.
- Add the spring onion and half of the saved fried garlic.
- Turn the flame to high and toss the noodles several times.
- Serve the noodles topped with scallions and the remaining fried garlic.
