Butter Garlic Noodles

Ingredients

  • 1½ liters water
  • ¼ tsp salt
  • 3 Tbs oil, separate
  • 1 pkg (200 g) noodles
  • 1 Tbs butter
  • 15 garlic cloves, chopped
  • 2 green chillies, chopped
  • ¼ cup diced onion
  • ¼ cup diced capsicum
  • ¼ cup cabbage, chopped
  • ¼ cup sliced spring onion
  • 1 tsp white vinegar
  • 2 tsp soy sauce
  • 2 tsp tomato ketchup
  • ½ tsp black pepper powder
  • Salt, to taste

Directions

  1. Bring the water, salt and one tablespoon of oil to a boil.
  2. Add the packet of dried noodles. Cook until almost done, separating the noodles as they cook.
  3. Drain and rinse with fresh water, drain again.
  4. Mix the noodles with a little oil and set aside.
  5. Add tbs butter to a hot pan (wok). Fry one tablespoon of the garlic until it begins to brown. Remove and set aside.
  6. Add the other two tablespoons of oil to the pan. Add the rest of the garlic and the two green chillies. Fry until fragrant.
  7. Add the onion, capiscum and cabbage. Fry on medium heat for 2 minutes.
  8. Add the vinegar and soy sauce. Mix well.
  9. Add ketchup and mix well.
  10. Add the noodles, pepper and salt and stir well, coating the noodles.
  11. Add the spring onion and half of the saved fried garlic.
  12. Turn the flame to high and toss the noodles several times.
  13. Serve the noodles topped with scallions and the remaining fried garlic.
