Meatball Subs

Ingredients

  • 16 meatballs (see below)
  • 2 cups pasta or marinara sauce
  • 4 hoagie rolls
  • 4 Tbs garlic butter
  • 1 cup shredded provolone or mozzarella cheese
Meatballs
  • 1 lb ground beef
  • 1 egg
  • 1⁄2 cup seasoned bread crumbs
  • 1⁄2 tsp Italian seasoning
  • 1⁄2 tsp onion powder
  • Salt & Pepper, to taste
Garlic Butter (1 cup)
  • 1 cup butter, softened
  • 2 sm garlic cloves, minced
  • 2 Tbs fresh parsley, minced
  • 1 Tbs fresh chives, sliced
  • 2-3 tsp fresh lemon juice

Directions

  1. Heat oven to 350° F.
  2. Combine all meatball ingredients. Roll into 1" balls and place on a parchment lined pan.
  3. Bake at 350° F for 20 minutes or until cooked through.
  4. Meanwhile, combine all Garlic Butter ingredients in a small bowl.
  5. Place cooked meatballs in a saucepan with pasta/marinara sauce and simmer covered 10 minutes.
  6. Meanwhile, spread 1 tablespoon of garlic butter inside each roll. Heat broiler and broil rolls until golden, about 3 minutes.
  7. Arrange rolls in a 9" x 13" baking dish. Place 4 meatballs in each roll and top with a little bit of sauce and cheese.
  8. Broil 2-3 minutes or until cheese is melted. Serve with additional sauce for dipping if desired.
