Avocado Egg Salad Sandwich

Ingredients

  • 2 eggs
  • 1⁄4 avocado
  • 1 Tbs Dijon mustard
  • 1⁄4 tsp white pepper
  • Salt & pepper, to taste
  • 1⁄2 tomato
  • 2 slices wholemeal bread

Directions

  1. Hard-boil the eggs. Let cool. Peel and seperate the whites from the yolks.
  2. Chop the egg whites and set aside. Combine the egg yokes, avocado, dijon mustard and white pepper in a bowl and mix until creamy.
  3. Stir in the chopped egg whites, season to taste.
  4. Spread egg salad on slice o bread, top with tomato slices and second slice of bread.
