Ensalada de Tomate

Ingredients

  • 2 lg tomatoes
  • 2 Tbs olive oil
  • 1⁄2 Tbs sherry vinegar (or red wine vinegar)
  • 1 clove garlic
  • 1 tsp dried oregano
  • 1 handful finely chopped parsley
  • Sea salt & black pepper

Directions

  1. Thinly slice 2 tomatoes (washed & patted dry) into slices that are 1⁄8" thick, then place them in a single layer, season with sea salt & black pepper just on one side and let them sit for 5 minutes
  2. Meanwhile make the dressing, add 2 tbsp extra virgin olive oil into a small bowl, along with 1⁄2 tablespoon sherry vinegar, finely grate 1 clove of garlic, add in 1 teaspoon dried oregano and lightly season with sea salt & black pepper, whisk together until well mixed
  3. After 5 minutes, transfer the slices of tomato into a serving dish, making sure to shake off any excess water from them, drizzle the dressing over the tomatoes and sprinkle with finely chopped parsley, enjoy!
