Tzaziki Sauce

Ingredients (>2 cup)

  • 1 English cucumber, seeded and minced
  • 1 tsp kosher salt, divided
  • 2 cloves garlic, finely minced
  • 1 tsp lemon zest
  • 1 Tbs lemon juice
  • 2 cups plain greek yogurt
  • 2 Tbs chopped fresh dill
  • 1⁄4 tsp white pepper

Directions

  1. Toss the cucumber with 1⁄2 teaspoon kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Spoon the cucumber into a cheese cloth or a double thickness napkin and squeeze dry. Set aside briefly.
  2. In one large mixing bowl, place the garlic with remaining 1⁄2 teaspoon salt, lemon zest and lemon juice. Mix to combine.
  3. Add the cucumber. Stir in the yogurt and dill. Combine thoroughly. Chill and use or cover tightly and refrigerate overnight.
