Tzaziki Sauce
Ingredients (>2 cup)

1 English cucumber, seeded and minced

1 tsp kosher salt, divided

2 cloves garlic, finely minced

1 tsp lemon zest

1 Tbs lemon juice

2 cups plain greek yogurt

2 Tbs chopped fresh dill

1⁄4 tsp white pepper
Directions

Toss the cucumber with 1⁄2 teaspoon kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Spoon the cucumber into a cheese cloth or a double thickness napkin and squeeze dry. Set aside briefly.

In one large mixing bowl, place the garlic with remaining 1⁄2 teaspoon salt, lemon zest and lemon juice. Mix to combine.

Add the cucumber. Stir in the yogurt and dill. Combine thoroughly. Chill and use or cover tightly and refrigerate overnight.
