Fresh Mint Dressing

Ingredients (~1 cup)

  • 1⁄2 cup olive oil
  • 1⁄2 cup lemon juice (about 2 lemons)
  • 1⁄4 cup fresh spearmint, packed
  • 3 Tbs honey or maple syrup
  • 1 Tbs Dijon mustard
  • 2 cloves garlic, roughly chopped
  • 1⁄4 tsp sea salt
  • 10 twists of freshly ground black pepper

Directions

  1. In a food processor or smoothie blender, combine all of the ingredients and blend until smooth.
  2. Taste, and add more salt and/or pepper if necessary. Use as desired!

Notes

  • This dressing will keep well, covered and refrigerated, for up to 1 week.
