Fresh Mint Dressing
Ingredients (~1 cup)

1⁄2 cup olive oil

1⁄2 cup lemon juice (about 2 lemons)

1⁄4 cup fresh spearmint, packed

3 Tbs honey or maple syrup

1 Tbs Dijon mustard

2 cloves garlic, roughly chopped

1⁄4 tsp sea salt

10 twists of freshly ground black pepper
Directions

In a food processor or smoothie blender, combine all of the ingredients and blend until smooth.

Taste, and add more salt and/or pepper if necessary. Use as desired!

This dressing will keep well, covered and refrigerated, for up to 1 week.
