Garam Masala
Ingredients (~1⁄2 cup)

1 Tbs cumin seed

2 Tbs coriander seed

16 green cardamom pods

1 Tbs black peppercorns

1 tsp whole cloves

1 tsp fennel seeds

1 10" cinnamon stick

1 star anise pod

1⁄2 teaspoon ground nutmeg
Directions

Combine all except nutmeg. Dry fry them until fragrant.

Once cooled, add the nutmeg and grind all to a powder.

Store in a sealed, airtight spice jar.
