Garam Masala

Ingredients (~1⁄2 cup)

  • 1 Tbs cumin seed
  • 2 Tbs coriander seed
  • 16 green cardamom pods
  • 1 Tbs black peppercorns
  • 1 tsp whole cloves
  • 1 tsp fennel seeds
  • 1 10" cinnamon stick
  • 1 star anise pod
  • 1⁄2 teaspoon ground nutmeg

Directions

  1. Combine all except nutmeg. Dry fry them until fragrant.
  2. Once cooled, add the nutmeg and grind all to a powder.
  3. Store in a sealed, airtight spice jar.
