Berbere Spice

Ingredients (~1⁄2 cup)

  • 4–6 whole dried red chilies
  • 2 teaspoons cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp cardamom seeds
  • 1 tsp fenugreek seeds
  • 1 tsp black peppercorns
  • 4 whole cloves
  • 5 whole allspice
  • 3 Tbs sweet paprika
  • 1 tsp ground turmeric
  • 1 tsp sea salt
  • 1⁄2 tsp ground ginger
  • 1⁄4 tsp ground cinnamon

Directions

  1. In a dry skillet, toast whole spices 3-5 minutes over medium heat until fragrant, stirring all the while so as not to scorch.
  2. Add ground spices and toast 2 minutes more.
  3. Grind in a spice grinder or mortar and pestle until finely ground.
  4. Store in a sealed container.
