Berbere Spice
Ingredients (~1⁄2 cup)

4–6 whole dried red chilies

2 teaspoons cumin seeds

1 tsp coriander seeds

1 tsp cardamom seeds

1 tsp fenugreek seeds

1 tsp black peppercorns
-
4 whole cloves
-
5 whole allspice

3 Tbs sweet paprika
-
1 tsp ground turmeric
-
1 tsp sea salt
-
1⁄2 tsp ground ginger

1⁄4 tsp ground cinnamon
Directions

In a dry skillet, toast whole spices 3-5 minutes over medium heat until fragrant, stirring all the while so as not to scorch.

Add ground spices and toast 2 minutes more.

Grind in a spice grinder or mortar and pestle until finely ground.

Store in a sealed container.
