Sausage, Peppers & Onions

Ingredients

  • 3 Tbs olive oil
  • 1 Tbs red wine vinegar
  • 2 cloves garlic, minced
  • 2 tsp oregano
  • 1 tsp crushed red pepper
  • 3 bell peppers, sliced
  • 1 lg yellow onion, sliced
  • Kosher salt
  • Fresh ground black pepper
  • 6 sweet or hot Italian sausages, quartered
  • 1⁄4 c freshly sliced basil

Directions

  1. Heat oven to 400° F.
  2. In a large bowl, whisk together oil, vinegar, garlic, oregano, and red pepper. Add peppers and onions to the bowl and toss to coat in oil mixture. Pour into 9”-x-13" pan. Scatter sausage pieces on top of vegetables.
  3. Bake until vegetables are tender and sausage is cooked through, 40 to 45 minutes.
  4. Top with basil and serve hot.

Notes

  • You can add baby potatoes, cut small. Also, adjust the pepper flakes for your comfort.
  • Another variation is to leave out the potatoes and serve this on hoagie rolls . Makes a delicious sandwich!
