Picante Chicken & Rice

Ingredients

  • 1 lb boneless chicken breasts (1⁄2" slices)
  • 3⁄4 cup chopped onion
  • 3 garlic cloves, minced
  • 1 Tbs vegetable oil
  • 11⁄4 cup chicken broth
  • 1 cup medium picante sauce
  • 1 cup converted rice
Garnish
  • Chopped tomato
  • Shredded Monterey Jack cheese
  • Sliced avocado

Directions

  1. Sprinkle chicken with salt and brown in oil on high heat; set aside.
  2. Cook onion and garlic.
  3. Add chicken broth and picante. Bring to a boil.
  4. Stir in rice; add chicken. Cover tightly and simmer 20 minutes.
  5. Serve on plate or in skillet and top with garnish.
