Picante Chicken & Rice
Ingredients
- 1 lb boneless chicken breasts (1⁄2" slices)
- 3⁄4 cup chopped onion
- 3 garlic cloves, minced
- 1 Tbs vegetable oil
- 11⁄4 cup chicken broth
- 1 cup medium picante sauce
- 1 cup converted rice
Garnish
- Chopped tomato
- Shredded Monterey Jack cheese
- Sliced avocado
Directions

Sprinkle chicken with salt and brown in oil on high heat; set aside.

Cook onion and garlic.

Add chicken broth and picante. Bring to a boil.

Stir in rice; add chicken. Cover tightly and simmer 20 minutes.

Serve on plate or in skillet and top with garnish.
