Chicken Thai Stir Fry
Ingredients
- 8 oz fettucini
- 1 Tbs sesame seeds
- 2 red bell peppers, thinly sliced
- Snow peas
- 1⁄2 cup scallion whites
- Angle sliced scallion greens
- 1 clove garlic, minced
- 1⁄2 cup chicken broth
- 2 Tbs peanut butter
- 41⁄2 Tbs soy sauce
- 1 Tbs rice vinegar
- 1 tsp sesame oil
- 1 tsp ginger, minced
- 1⁄2 red pepper flakes
- 1 lb chicken, cut to bite size
Directions
- Toast sesame seeds, set aside.
- Cook fettucini.
- Heat 1 tablespoon vegetable oil to high. Stir fry the red bell peppers for 1 minute.
- Add peas, scallion whites and garlic. Stir fry for 2-3 minutes. Set aside and keep warm.
- Add broth mixture, stir in peanut butter until it is melted, continue to heat until boiling.
- Add chicken and cook for 2 minutes.
- Add pepper mixture and mix until heated.
- Serve over fettucini, topped with sesame seeds and scallion greens.
