Chicken Thai Stir Fry

Ingredients

  • 8 oz fettucini
  • 1 Tbs sesame seeds
  • 2 red bell peppers, thinly sliced
  • Snow peas
  • 1⁄2 cup scallion whites
  • Angle sliced scallion greens
  • 1 clove garlic, minced
  • 1⁄2 cup chicken broth
  • 2 Tbs peanut butter
  • 41⁄2 Tbs soy sauce
  • 1 Tbs rice vinegar
  • 1 tsp sesame oil
  • 1 tsp ginger, minced
  • 1⁄2 red pepper flakes
  • 1 lb chicken, cut to bite size

Directions

  1. Toast sesame seeds, set aside.
  2. Cook fettucini.
  3. Heat 1 tablespoon vegetable oil to high. Stir fry the red bell peppers for 1 minute.
  4. Add peas, scallion whites and garlic. Stir fry for 2-3 minutes. Set aside and keep warm.
  5. Add broth mixture, stir in peanut butter until it is melted, continue to heat until boiling.
  6. Add chicken and cook for 2 minutes.
  7. Add pepper mixture and mix until heated.
  8. Serve over fettucini, topped with sesame seeds and scallion greens.
