Blueberry, Basil and Goat Cheese Pie

Ingredients

  • Dough for a single pie crust
  • 2 C fresh blueberries
  • 2 Tbs plus 2 tsp sugar, divided
  • 1 Tbs cornstarch
  • 1 Tbs minced fresh basil
  • 1 lg egg
  • 1 tsp water
  • ¼ C crumbled goat cheese
  • Fresh basil leaves, torn

Directions

  1. Heat oven to 375°. On a floured sheet of parchment, roll dough into a 10" circle. Leave on parchment and transfer to a baking sheet.
  2. Mix blueberries, 2 tablespoons sugar, cornstarch and basil. Spoon blueberry mixture over crust to within 2" of edge. Fold crust edge over filling, pleating as you go and leaving the center uncovered.
  3. Whisk egg and water; brush over crust. Sprinkle with remaining sugar. Bake 30 minutes.
  4. Sprinkle with goat cheese; bake until crust is golden and filling is bubbly, about 10 minutes longer.
  5. Transfer to a wire rack to cool.
  6. Chill until serving. Top with torn basil leaves before serving.
