Ciabatta Bread
Ingredients

400 g flour

3 Tbs salt

1 tsp sugar

2 Tbs olive oil

1 tsp dried yeast

300 ml warm water
Directions

Put 10% of the flour in a large bowl.

Add the water and the yeast. Mix with a fork or spatula.

Add the olive oil, sugar and salt. Mix well.

Add the remaining flour a little at a time, mixing continuously.

Cover with plastic wrap and set in cold oven for 2 hours.

Remove the dough.

Place dish with water in oven and heat oven to 450°F.

Generously flour your surface and with a wetted spatula remove the dough.

Drizzle some olive oil on top and spread with spatula.

Reinforce the dough by pushing the flour to the sides then turning up the sides.

Spread flour at the end of the dough, cut one-fifth of the dough, turn over into the flour.

Gently lift and place on paper lined baking sheet.

Continue this process until you have 5 small loaves.

Bake the bread for 20 minutes. Turn the pan around and remove the water, cook for another 5 minutes.

Immediately place on cooling rack and wait until it cools down before slicing.
