Banana Muffins

Ingredients

  • 1‌1⁄2 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1⁄2 tsp salt
  • 3 med ripe bananas
  • 1 lg egg, room temperature
  • 1⁄3 cup vegetable oil
  • 1 tsp vanilla

Directions

  1. In a large bowl, combine the dry ingredients.
  2. In another bowl, mash the bananas. Add the egg, oil and vanilla; mix well.
  3. Stir into the dry ingredients just until moistened
  4. Fill greased or paper-lined muffin tins half full.
  5. Bake at 375°F for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
