Carrots
This is the first time we've preserved carrots. They are so inexpensive and readily available during the year that it doesn't really make sense to can them. However, we had a bunch extra and decided to try it.

Peel and trim the carrots

Get a large pot of water to a full boil

The carrots can be sliced into discs or you can use them vertically to preserve the shape.

Fill the jars with the carrots. Optionally add a pinch of salt to each jar.

Fill the jar with boiling water leaving 1' headspace

Wipe, lid and ring.

Pressure can at 10 pounds for 30 minutes.
