Asparagus
This is the first vegetable of the season. Really, it is best either fresh or as soup but if you want to preserve it, try freezing.

Rinse and trim the spears

Set up a large pot of boiling water and a large pot of ice water

Blanch the asparagus by dipping for a minute into the boiling water then directly into the ice water for a minute

Dry the asparagus then spread the spears out on a large baking sheet

Freeze the spears for 1 to 2 hours. Vaccum seal or insert into plastic bags and remove air
