Asparagus

This is the first vegetable of the season. Really, it is best either fresh or as soup but if you want to preserve it, try freezing.

Ingredients

  • Fresh aparagus

Directions

  1. Rinse and trim the spears
  2. Set up a large pot of boiling water and a large pot of ice water
  3. Blanch the asparagus by dipping for a minute into the boiling water then directly into the ice water for a minute
  4. Dry the asparagus then spread the spears out on a large baking sheet
  5. Freeze the spears for 1 to 2 hours. Vaccum seal or insert into plastic bags and remove air
