Spicy Kielbasa Soup

Ingredients (7 quarts)

  • 1 lb kielbasa
  • 3 med onions, chopped
  • 3 green bell pepper, chopped
  • 3+ rib celery with leaves, thinly sliced
  • 12 cloves garlic, minced
  • 3 qts chicken broth
  • 3 cans northern beans, drained
  • 3 qts tomatoes
  • 3 zucchini, sliced
  • 3 carrots, shredded
  • 3 Tbs dried parsley
  • ½ - 1 tsp red pepper flakes, crushed
  • 1 tsp pepper

Directions

  1. In a nonstick skillet, cook kielbasa over medium heat until lightly browned.
  2. Add the onion, green pepper and celery; cook and stir for 3 minutes.
  3. Add garlic; cook 1 minute longer.
  4. Stir in the remaining ingredients and bring to boil
  5. Fill your jars leaving a 1" headspace
  6. Pressure can at 11 lbs. for 1½ hours (90 minutes)
