Spicy Kielbasa Soup
Ingredients (7 quarts)

1 lb kielbasa

3 med onions, chopped

3 green bell pepper, chopped
-
3+ rib celery with leaves, thinly sliced

12 cloves garlic, minced
-
3 qts chicken broth
-
3 cans northern beans, drained
-
3 qts tomatoes
-
3 zucchini, sliced
-
3 carrots, shredded
-
3 Tbs dried parsley
-
½ - 1 tsp red pepper flakes, crushed

1 tsp pepper
Directions

In a nonstick skillet, cook kielbasa over medium heat until lightly browned.

Add the onion, green pepper and celery; cook and stir for 3 minutes.

Add garlic; cook 1 minute longer.

Stir in the remaining ingredients and bring to boil

Fill your jars leaving a 1" headspace
-
Pressure can at 11 lbs. for 1½ hours (90 minutes)
