Garlic Potato Soup

The combination of red and sweet potatoes gives it complexity and body, the garlic...well - yum.

Ingredients (7 quarts)

  • 10 med onions, sliced
  • 25 med red potatoes, large dice
  • 10 med sweet potatoes, large dice
  • 1 bunch celery, diced
  • 10 heads of garlic, roasted and mashed
  • Olive oil
  • 1 gal vegetable broth
  • ~¼ cup salt
  • ~3 Tbs ground pepper

Directions

  1. Roast garlic until soft - do not brown!
  2. Over low flame, in olive oil, cook onion until soft - do not brown!
  3. Add rest of the ingredients except garlic and bring to boil.
  4. Add salt and pepper, adjust.
  5. Add mashed garlic.
  6. Fill jars to 1" headspace and process for 1 hour at 11 lbs. pressure
