Garlic Potato Soup
The combination of red and sweet potatoes gives it complexity and body, the garlic...well - yum.
Ingredients (7 quarts)

10 med onions, sliced

25 med red potatoes, large dice

10 med sweet potatoes, large dice

1 bunch celery, diced

10 heads of garlic, roasted and mashed

Olive oil
-
1 gal vegetable broth
-
~¼ cup salt
-
~3 Tbs ground pepper
Directions

Roast garlic until soft - do not brown!

Over low flame, in olive oil, cook onion until soft - do not brown!

Add rest of the ingredients except garlic and bring to boil.

Add salt and pepper, adjust.

Add mashed garlic.

Fill jars to 1" headspace and process for 1 hour at 11 lbs. pressure
