Tomato Sauce
Always good to have some on hand, very useful stuff.
Ingredients (7 pints)

~20 lbs tomatoes

7 Tbs bottled lemon juice
Directions

Wash, remove stems, and trim tomatoes of any bruised or discolored parts.

Working quickly and with 1 pound of tomatoes at a time, quarter the tomatoes and place in a large saucepan.

Bring the tomatoes to a boil as you crush them with a potato masher or large spoon.

Continue adding the quartered tomatoes, cutting them up as you work. Keep mashing the tomatoes over high heat until all pieces have been added.

Let them simmer for 5 minutes.

Run the heated and crushed tomatoes through a food mill or sieve to remove the skins and seeds.

Return to the sauce pan and simmer to desired consistencty.

Add 1 tablespoon of lemon juice to each pint jar.

Fill jars leaving a ¼" headspace. Wipe, lid and ring.

Process in a waterbath for 35 minutes.
