Orange Date Cardamom Preserves
Ingredients (12 half-pints)

12 lbs oranges, sectioned (18 cups of sections)

1½ cups water

3 lemons, juice and zest

3 vanilla beans (or 3 Tbs Vanilla extract)

6 cups dates, chopped

6 cups sugar

1½ cups honey
-
4½ tsp ground cardamom

1½ tsp cinnamon

¼ cup Grand Marnier
Directions

Add oranges and water to large pot. Set to medium-high heat and raise to a boil.

Reduce heat to a full simmer and cook until oranges have broken down.

Add the dates, sugar, honey, lemon juice and zest and stir.

Split vanilla beans lengthwise and scrape out insides. Add pod and scrapings to the pot.

Add the cardamom and cinnamon, stir and cook over medium-high heat until you reach the gel point, 220°. Use the cold plate test to ensure gelling.

Add the Grand Marnier or any orange liquer.

Fill your jars with ¼” headspace. Remove any air bubbles. Wipe, lid and ring.

Process in a waterbath for 10 minutes.
