Caramel Apple Coffee Jam
Ingredients (12 half-pints)

15 cups apples: peeled, cored and chopped (honeycrisp)

6 cups strong brewed coffee (double the regular strength)

¾ cups classic pectin (not low sugar)

1½ tsp allspice (or apple pie spice or a mixture)

6 cups brown sugar
Directions

Add apples and coffee to large pot on medium-high heat. Simmer until the apples are very soft.

Turn the heat to low and use an immersion blender until apples are the consistency of applesauce.

Add the allspice and pectin, whisk in. Raise the tempurature to high and bring to a boil that cannot be stirred down.

Add the sugar. Raise again to a boil that cannot be stirred down and boil hard for 1 minute.

Fill your jars leaving ¼” headspace. Remove air bubbles. Wipe, lid and ring.

Process in a waterbath canner for 10 minutes.
