Black Forest Preserves
Ingredients (14 half-pints)

6 cups dark sweet cherries, roughly chopped

⅔ cups sifted cocoa powder

1 cup lemon juice

½ cup classis pectin (not low sugar)

13 cups sugar

½ cup Amaretto (optional)
Directions

Add the cherries, cocoa powder, lemon juice and pectin to a large pot.

Set temperature to highest possible and raise to a boil that cannot be stirred down.

Add sugar. Stir well. Raise again to a hard boil. Boil for 1 minute.

Turn the heat off, add the Amaretto and stir.

Fill your pint jars with ¼” headspace. Wipe, lid and ring.

Process in a waterbath for 10 minutes.
