Ingredients (12 half-pints)

4 lb sweet onions, peeled & diced

1 cup balsamic vinegar

1 cup maple syrup

1 Tbs salt

1 Tbs & 1 tsp white pepper

2 bay leaves

⅓–½ cups bourbon (optional)

4 cups apple juice

6 Tbs low or no sugar pectin

1 cup packed brown sugar (may use white instead)
Directions

Combine onions, vinegar, syrup, salt, pepper & bay leaves in pot over medium heat. Cook for 15 minutes, until onions become transparent. Remove bay leaves.

Add the bourbon (if using), the apple juice, the pectin and stir. Turn the heat to high and cook until you get a boil that cannot be stirred down.

Add the sugar. Bring back to a boil that cannot be stirred down. Boil for one minute.

Fill jars, leaving ¼” headspace. Remove air bubbles. Wipe, lid and ring.

Process jars in waterbath for 15 minutes.
