Plums

New! Never tried. Not really familiar with plums at all.

Ingredients (6 quarts)

  • 1 peck of plums (¼ bushel), 12-15 lbs
  • Honey syrup, light

Directions

  1. Gently wash the plums.
  2. Cut the plums in half and remove the pits.
  3. Heat the syrup to a boil.
  4. Add the plums, return to a boil. Then boil for 2 minutes.
  5. Remove from heat, cover, and let sit for 20 to 30 minutes.
  6. Pack plums into hot jars, cover with boiling syrup leaving a ½” headspace. Remove air bubbles.
  7. Wipe, lid and ring. Water bath for 25 minutes.
