Another new rhubarb recipe. We haven't made it yet, we'll let you know how it turns out.

Ingredients (6 half-pints)
  • 8 Cups diced rhubarb
  • 3 Cups honey
  • 2 Tbs lemon juice
  • 2 tsp vanilla
  • 1½ ground ginger
  1. Combine all ingerdients in large saucepan. Bring to boil .
  2. Lower heat and simmer until thickened and smooth, stirring frequently.
  3. Ladle hot into hot jars leaving ½" headspace.
  4. Water bath for 10 minutes
  • This recipe uses honey instead of sugar, and not too much of it. The tartness of the rhubarb comes through the sweetness of the honey. It's a nice combination.
