Raspberries are a berry you can preverve whole without losing their body. We use a light syrup so as to not overpower the flavor of the berries. Great on ice cream.

Ingredients (7 pints)
  • 12 pounds raspberries - black, red or mixed
  • Sugar syrup, light
  1. Wash berries in cold water.
  2. Fill jars.
  3. Cover in boiling syrup, 1½" headspace. Remove air bubbles.
  4. Water bath 15 minutes.
