Pear Preserves

Sweet and complex with a nice texture.

Ingredients (14 pints) Instructions:
  1. Peel and core the pears. Cut lengthwise in half.
  2. Add sugar to water in pot and simmer until dissolved.
  3. Add the pears, ginger, lemon and honey into the pot.
  4. Bring to a boil, reduce heat and simmer for ~2 hours until thick and syrupy.
  5. Fill jars leaving 1½" headspace.
  6. Water bath for 20 minutes.
